Our semolina is mixed with natural spring water and pressed with antique bronze dies, giving each shape a coarse surface that better absorbs sauce. Our pasta is dried slowly and naturally at low temperatures for up to two days. This process preserves the original nutrients and exceptional flavor of our wheat.
